The 16th edition of the Madrid Cocido Route will take place from February 15 to March 31, 2026, featuring 46 restaurants across the Community of Madrid, as well as in the provinces of Toledo and Guadalajara.
This year, journalist and broadcaster Goyo González will be appointed Ambassador of the Madrid Cocido Route 2026, becoming the voice and image representing this iconic traditional stew.

When the cold sets in Madrid, there is a universal language that connects neighborhoods, generations, and social classes: a slow-cooked stew. Because cocido madrileño is not just a recipe—it is collective memory, popular culture, and above all, a way of understanding life slowly enjoyed around the table.
Within this context, the 16th Madrid Cocido Route once again establishes itself as one of the major gastronomic events of the season, celebrating a dish that defines the culinary DNA of the capital. Promoted by Alberto de Prado, director of Qué Rico España, the route has a clear objective: to protect, promote, and showcase this gastronomic heritage both within and beyond the Community of Madrid.
This new edition arrives at a particularly relevant moment for gastronomic tourism. Today’s traveler seeks authentic experiences, and few experiences are as genuine as sitting in a Madrid restaurant sharing a cocido prepared with local ingredients, inherited techniques, and deep respect for tradition.
Moreover, the Madrid Cocido Route has become a strategic tool for the hospitality sector: it helps stimulate seasonal consumption, build customer loyalty, and position Madrid as a global gastronomic destination. In this sense, cocido acts as a culinary ambassador—simple in appearance, technically complex, and rich in cultural storytelling.
Recently, cocido madrileño was declared a Cultural Asset of Regional Interest (BIC) in the category of Intangible Heritage by the Community of Madrid, recognizing its deep roots in the region’s cultural identity.
This dish has transcended its humble origins to become a symbol of Madrid’s gastronomy, present both in family homes and in renowned restaurants. The declaration aims to preserve its legacy, highlighting not only its culinary value but also its role as a social connector and shared tradition across generations.
But… where can you eat the best cocido madrileño?
The answer is simple: wherever it leaves the best memories in your taste buds and your heart.
This historic dish can be enjoyed in a wide range of variations—served in two or three courses (“vuelcos”)—because, as the popular saying goes, “every master has his own recipe.” Each restaurant brings its own personality and interpretation.
Ultimately, only the diners themselves can decide where the “Best Cocido Madrileño 2026” is served.
