How to make Brazilian sweet pizza

  1. Make the dough – Begin with dissolving the yeast in some water for 5-10 minutes. Add 1 cup of flour, water and yeast liquid to a Food processor. Pulse a few times until combined. Add the rest of the ingredients and form a dough ball. Remove to a board and knead into a smooth ball. Set into an oiled bowl and cover. Let the pizza dough rise for about an hour.
  2. Prepare the chocolate sauce – Use a heavy bottom sauce pan and place it over medium-low heat. Add condensed milk, cocoa powder, sour cream and butter. Stir continuously for 5-10 minutes. Remove from hear when it reaches the right consistency. Remove to a separate bowl to cool for 10 minutes before topping.
  3. Assemble the crust and bake – Turn and roll out your pizza dough into a large circle. Pinch the ends to create a raised crust. Load onto a flour dusted pizza peel. Transfer the crust into a preheated pizza oven and cook for 1 minute while turning. You can also bake in an 550 degree F oven for 8-12 minutes.
  4. Top and enjoy your pizza – Once the pizza crust is cooled, slather on the chocolate sauce. Then top the pizza with sprinkles and finally the fresh red strawberries. Yum!

Ingredients

  • For the Dough
  • 2 1⁄2 cups wheat flour (more for dusting)

  • 2 tsp sugar

  • 1 Tbsp fresh yeast

  • 2 Tbsp extra virgin olive oil

  • 1 tsp salt

  • 1 cup warm water (divided)

  • For the Chocolate Sauce
  • 1⁄2 cup condensed milk

  • 1 Tbsp Dutch process cocoa powder

  • 3 Tbsp sour cream

  • 1 tsp butter (or margarine)

  • Toppings
  • 1⁄4 cup brigadeiro granules or chocolate sprinkles

  • 10 – 15 fresh strawberries (halved)

Directions

  • To make the dough
  • Transfer the fresh yeast to a small bowl and add ⅓ cup of water. Mix well and let it bloom for 5-10 minutes.
  • Add 1 cup of flour, sugar, water, and yeast liquid into the food processor. Pulse about 4-5 times.
  • Next, add the salt, 1½ Tbsp oil, and 1½ cup of flour. Pulse for 5-10 seconds till the dough starts to come together. Add 1¼ cup of flour and pulse again for a few seconds till nicely mixed.
  • Check the dough when it starts to form a ball-like shape. If it seems wet, add the remaining ¼ cup of flour. Run the food processor for 3-5 minutes till it comes together into a dough ball.
  • Remove the dough to a flat surface, knead for 5-10 seconds with your hands, and shape it into a smooth ball.
  • Grease the bowl with the remaining ½ Tbsp oil. Place the dough ball into the bowl and coat it with the oil. Cover with a towel & keep in a warm spot to rise for an hour.
  • To prepare the chocolate sauce
  • Place a heavy-bottomed saucepan on the stove at medium-low heat.
  • Add the condensed milk, cocoa powder, sour cream, and butter. Stir continuously for 5-10 minutes at medium heat.
  • Remove the pan from heat when the sauce thickens and reaches the right consistency. A sure-shot indication of the sauce’s doneness is that moving the spatula will reveal the bottom of the saucepan.
  • Pour the sauce into a bowl & let it cool for 5-10 minutes.
  • To bake the crust and assemble the pizza
  • Preheat the propane gas pizza oven to 800° F.
  • Turn out the proofed dough onto a floured countertop. Apply some flour to the rolling pin and roll it out into a 15-inches circle.
  • Tuck an inch around the edges to create a raised outer ring. Also, poke the center a few times using a fork.
  • Drag the raw pizza crust onto a flour-dusted pizza peel. Re-shape it into a circle.
  • Transfer the crust into the preheated pizza oven. Bake for a minute while turning it using the pizza peel.
  • Remove the crisp pizza crust into a dish and let cool for 5-10 minutes.
  • Slather the prepared chocolate sauce evenly on the crust. Top with chocolate sprinkles and halved strawberry pieces.
